Update build workflow to python 3.11

Install required dev dependencies in build action

Change activating sideload since behaviour of adb with regards to return codes seems to have changed with versione 35.0.1

I got the LineageOS images from
https://androidfilehost.com/?a=show&w=files&flid=64356 and TWRP image
from https://dl.twrp.me/kminilte/

It is a copy of `klte.yaml` with minor changes to adapt to the kminilte
model.

I've added the config for the Xiaomi Redmi Note 10 Pro (sweet) with
modelnr: M2101K6G (with some help from @anon1892, thank you!) .
According to the [LineageOS
wiki](https://wiki.lineageos.org/devices/sweet/variant1/) there are
three variants of this phone. This config has been created and
successfully tested for the M2101K6G model.

I've also added this phone to the table of supported devices in the
README.md.

This pull-request would solve my own requested support issue #404
